Super Moist Banana Bread (gf,df)

Ingredients

300g ripe banana, smashed

3 large organic eggs

80ml maple syrup or honey

80ml macadamia oil (or extra virgin olive oil)

drizzle vanilla exteact concentrate

1/2 tsp cinnamon

2 tsp baking powder

250g almond meal

***optional addition of 2 tbs of protein powder

Method

Preheat the oven to 160*c fan forced. Line a loaf tin with baking paper and set aside.

Mash the banana, then add the honey/maple syrup, oil, eggs and vanilla in a large bowl. Mix until very well combined.

Add to this the almond meal, cinnamon and baking powder and mix well.

Place the mixture into your lined loaf tin, with extra sliced banana on top.

Baked for 45mins or until skewer comes out clean. If it looks to be getting too brown, cover with foil close to the end to prevent burning.These can also be made as individual little cakes. Still line your tin and reduce the time to about 30 minutes, or until tan/brown and skewer comes out clean or it bounced back when pressed lightly upon completion of baking.

Store in an airtight container in the fridge. Can be baked ahead and frozen. Just be sure to store well sealed to prevent freezer burn and drying out.
