Macadamia Goldenberry Squares-non-vegan ~~~~~~~~Vegan Almond & Sesame Squares~~~~~~~~~

Ingredients:

1 cup buckwheat puffs

½ cup sesame seeds

⅓ cup well crushed almonds (Macadamias go well with the Golden berries, just saying;)

½ cup coconut flour

½ cup sultanas (Golden Berries are amazing as a substitute here!!!)

75ml coconut oil (Non-vegan option use 75g organic butter here)

2 tbsp. maple syrup

¼ cup rice malt syrup

¼ cup almond spread

2 tbsp. coconut oil

Method:

Line your square slice tin with baking paper and set aside.

Pop the coconut oil into a non-stick pan and heat gently. Add to this all the dry ingredients except for the sultanas/goldenberries, and gently toast over a medium to low heat until a light golden colour is achieved. About 10 minutes or so. Add the sultanas/goldenberries and mix through.

Then in another small pan, gently heat the coconut oil (or 75g organic butter), maple syrup, rice malt syrup and almond butter until they’re melted together forming a caramel consistency. Take care here not to allow them burn and stick to the bottom of the pan.

Add the caramel mix to the lightly toasted dry mixture and fold through until fully coated. Using the back of the spoon, press this mixture evenly into your prepared tin * and place in the fridge to set for an hour or so, before slicing onto squares to serve. Store in the fridge in an airtight container.

Perfect addition to your fridge staple snacks supply, giving you added energy, without the guilt factor of having loads of processed sugar.

*As an optional extra here, you could pour some home made chocolate over the top and allow it to set. (melted cocao butter, cacao powder, maple syrup, vanilla extract concentrate, gently blended together in that order)
