Cinnamon Almond meal Biscuits

(Makes about 15 biscuits)

Ingredients

1 cup buckwheat flour

1 cup almond meal

1/2 tsp baking powder

1 tsp cinnamon powder

1/3 cup maple syrup

1 dessert spoon coconut oil

1/4 tsp vanilla extract concentrate

Method

Whisk the almond meal, buckwheat flour, cinnamon and baking powder together. Yes, whisk! A bit of a different approach used, but it really helps break up any lumps in the dry ingredients.

Add to this the maple syrup & vanilla and mix using a wooden spoon. Once almost together as a dough, add the coconut oil and mix with your hands to blend it through, forming a firm dough. Roll into balls, placing on a paper lined baking trays, pressing down lightly with a fork. *

Bake for about 12 - 15 minutes in the oven at 180*c, or until lightly golden on top. Remove from the oven and allow to cool on the tray. Store in an air-tight container once cooled.

*You can swap out the cinnamon for dried ginger powder for a slightly different biscuit.

Just mark it differently on top, with perhaps a crossed pattern for one, and a lined pattern for the other.
