Avocado and Mango Salad

(Serves 4 as a side dish)

Ingredients:

1 mango (cubed)

1 avocado (cut into chunks)

1 medium sized bag of green leafy mix of your choice

1 orange (segmented)

Parsley for garnish

Sprinkle of dried chilli flakes (optional, but worth even just a little bit for the flavour)

Dressing-

Juice of 1 lime

2 tbsp. avocado/olive oil

1 tsp. honey

Good pinch of himalayan salt

Parsley/coriander leaves for garnish

Method:

Segment the orange, cube the mango and cut the avocado into chunks. Place the green leafy salad mix onto your serving plate and layer the other ingredients on top, gently lifting them through.

Mix all the dressing ingredients together well and drizzle over the salad.  Sprinkle a few torn parsley/coriander leaves over the top for garnish.  Sprinkle the dried chilli for the final touch.

*Note - This salad is best made close to serving time, so the avocado doesn’t brown too much.
